Apex SMALL BATCH Fino sherry
Fino Sherry is deserving of its name, meaning ‘Fine’ in Spanish. Fino is a dry style of sherry, with careful avoidance of oxidation during its maturation creating a refined flavour.
This Apex edition spent a generous 1.5 year finish in deliciously dry Fino sherry casks. The resulting whisky boasts a silky mouthfeel and an intriguing range of lush flavors that stand up to the pedigree of its cask.
Our first ever Fino Sherry cask matured whisky hits the sweet spot where both the delicate flavours inherent in Fino, and the bold character of the spirit, combine to showcase the craftsmanship of this small batch.
AROMA
Sweet tobacco followed by raisins and red blossom.
PALATE
Waxy with notes of caramel, oak, and red fruits.
FINISH
Red plum with vanilla, raisins, and black tea in the background.
APEX SMALL BATCH Marc de Galilee
Jullius’ Marc is made from a curated blend of local Israeli wine grapes, with the resulting complexity coming through in our whisky’s maturation. This Apex is almost perfumed. Every sip transports you to a sun soaked vineyard in Israel’s verdant north, lush with the wildflowers and fresh fruit of the Galilee.
AROMA
White blossom, followed by vanilla and stone fruits.
PALATE
Caramel and vanilla, with notes of citrus and white grapes.
FINISH
Medium and dry, peach with herbal tea in the background.
APEX SMALL BATCH Mezcal
Single malt whisky with an 18 month ex-Mezcal finish, previously matured in ex-Bourbon casks. Robust notes of smoke and spice permeate this sweet whisky.
AROMA
Earthy and grassy with notes of fresh tobacco and caramel.
PALATE
Green apple with vanilla and lightly smoked sage in the background.
FINISH
Spicy and dry, caramel with citrus and pear.
apex SMALL BATCH pomegranate wine cask
This small batch, single malt whisky was aged in ex-Bourbon casks and finished in fortified style pomegranate wine casks for a period of six months. The unique pomegranate fruit offers this whisky Its exceptional flavors.
Aroma
Ripe pomegranate, followed by a swirl of rich vanilla, roasted coffee and butterscotch. Strong earthiness, accompanied by notes of orris root, spearmint and freshly baked sour apple.
Palate
Juicy, with crushed pomegranate grains, dried figs and a bouquet of spicy-sour herbs.
Finish
Long and dry, with a hint of toasted oak, followed by sourdough pretzels with a side of red fruits.
Apex SMALL BATCH Peated Bourbon
Our limited peated new make forms the foundation of this single malt whisky, creating a gently peated spirit that matures entirely in ex-bourbon casks.

AROMA
Grassy and earthy with vanilla and spices, Dried apricot in the background.
Palate
Peaty with caramel and citrus, followed by black pepper and smoke.
FINISH
Medium and warm. Sweet, peat, and spices with green apple and pear.
APEX SMALL BATCH cognac cask
This small batch of single malt whisky reveals the finest flavors of 400-liter, French Limousin oak casks, previously used to mature superb Cognac. A vatting of carefully selected, ex-Bourbon and ex-Cognac casks.
AROMA
Warm spices, complete with cloves, thyme and star-anise, evolving into an exotic combo of cacao powder and mango followed by notes of dark chocolate truffle and stone fruit.
Palate
Rich texture and a warm mouthfeel, with a hint of nutmeg spiciness. Sweet fruit, with a touch of tart red berries.
FINISH
Baked apple pie, rich in butter and enhanced by cacao and sweet toasted barley.
apex small batch rum cask
This exciting single malt whisky was aged in a very old ex-Jamaican rum cask, unveiling a carnival of funky Caribbean flavors, sweet tropical notes, and a full-bodied experience.
Aroma
Milk chocolate with toasted coconut and a sprinkle eucalyptus oil.
Palate
Sliced plantain in heavy cream and molasses.
Finish
Brazil nuts, dark-roast coffee and seasoned oak.
apex small batch ex- rye cask
This single malt whisky was fully matured in rare quarter-cask ex-rye whisky casks, strongly influenced by increased contact with the wood and the distinctive, delicious flavors embedded in it.
Aroma
Creme patisserie sprinkled with ground cloves, and a hint of tamarind.
Palate
Hard herb candy, sour plums, and potent cinnamon sticks.
Finish
Rich oak accompanied by golden syrup and slight black licorice.
